Sometimes I want to have a restaurant-style brunch meal on the weekends, but don’t want to venture out into the extreme minus-a-million Canadian cold to have it. Last Saturday my husband and I decided exactly that, and with the snow coming down it seemed like the perfect time for making our own brunch, an Egg Sausage Hash wonderful masterpiece.
I got this recipe from an actual book (and not Pinterest, so odd)! Jo Pratt’s In the Mood for Food and added a few of my own changes.
Here’s What:
– 2 medium-large potatoes
– 1-2 tablespoons olive oil
– 1/2 onion chopped
– A bunch of spinach
– 2 sausages, they can be any kind you like
– a couple shakes chili flakes
– a few pinches of parsley
– oil, margarine or butter for frying eggs
– 2 eggs, or as many as you’d like to eat!
– salt and pepper to taste
– Ketchup on the side if you like
Here’s How:
1. Boil some salted water and throw in your potatoes until they are softer, then remove them from water and cut them into bite-sized hash brown-like pieces.
2. Heat olive oil in a pan and fry the onion until it starts to soften.
3. Cut the sausage into pieces and add to the pan.
4. After a few minutes add your chopped potato pieces and fry everything together.
5. Spinach doesn’t take long to fry, so throw a few handfuls onto the pan. Don’t forget it shrinks, so you can add quite a bit.
6. Add parsley, chili flakes, salt and pepper to the mix, fry until the sausages are cooked, potatoes are golden and it starts to look delicious!
7. Spoon on to plates/bowls for serving.
8. Keep the food warm while you fry up the eggs, 2 or as many as you’ll eat.
9. Serve the eggs sunny-side-up on top of the potato-hash, squirt some ketchup on if you’re saucy.
** If you like, you can start frying the eggs while your sausage-potato hash is finishing up. I’m lucky and have a great husband who helps with the cooking!
